Although Poland is the largest producer of geese in Europe, this meat appears surprisingly rarely on our tables. Goose meat is considered a special, even festive dish, rather than a product of the everyday diet. Why is that? And why is it worth changing this – especially in November, when the feast of St. Martin takes place?
Just a few decades ago, goose meat was a true pride of Polish tables. It was served at homes, inns, and holidays – especially around St. Martin's Day (November 11th). However, over time, along with the development of industrial poultry farming, it began disappearing from everyday menus. Why? Because geese are not suitable for industrial farming – they require space, natural feed, and time to reach the appropriate weight. As a result, their meat is more expensive and harder to obtain than, for example, chicken or turkey.
The second reason why we eat goose meat so rarely is its… prestige. Goose meat is associated with festive dishes – elegant, requiring time and skills to prepare. Many people fear they will not manage cooking goose at home, although in reality, it is simpler than it seems.
It is also worth remembering that goose meat is extremely healthy. It contains complete protein, iron, vitamin B12, as well as unsaturated omega-3 and omega-6 fatty acids, which support the function of the heart and nervous system. This is meat that can be eaten without guilt – of course, as long as it is consumed in moderation.
